Flavor Factoid Ovidio Ramirez processes his 100-tree crop with the utmost care. Each harvest is processed the same day they are picked. After harvest, the cherry are depulped and fermented for 18 to 24 hours. Once the fermentation process has loosened the fruit mucilage from the beans, the beans are washed three times. They are then dried under nylon for 3-5 days. The result is a crisp and clean flavor profile.
