Factoid: The Pereira family turned a sharp focus toward quality since they took over the farm in 1979. Fazenda Santa Ines was planted with new varietals even though it already had a coffee crop. The farm went on to produce the world record holder for the highest scored specialty coffee. The Pereira’s have a keen focus on soil health and diversity on the farm; less than half the land is used for coffee trees. Their attention to quality has brought us this smooth and complex natural process coffee.

- Altitude: 1795-1900 MASL
Factoid: Kore is a village in the district Kochere. The larger region encompassing this district is Yirgacheffe. In the past few years, the coffee here has become much more traceable. Due to recently made political allowances, importers can now trace Ethiopian coffees to the wash station where the beans are processed. Each farm averages about two or three acres, so it literally takes a village to create a full crop. This sparkling berry brew is sure to transport you to the country that coffee was born.

Factoid: This selection comes from the microregion Cauca, Colombia. The sourcing program for this origin is designed to reward growers with higher prices for higher quality beans. In order to qualify for higher pricing, a farmer has to have a well-maintained infrastructure, hand-picked beans, and an overall healthy crop. Cauca is known for its citric acidity and creamy mouthfeel, which comes through in this regional selection.
Guatemala Huehuetenango

- Variety: Bourbon, Caturra, Catuai, Maragojype, Pache
- Process: Washed
- Altitude: 1600-1800 MASL
Factoid: Guatemala has the high growing altitudes necessary for dense beans. These hard bean coffees provide sweet, full-bodied notes approachable for any coffee drinker. These larger varietals (Maragojype is also named the “elephant bean”) provide less of the delicate floral and citrus notes, and more of the sweetness that many expect from a well-balanced cup of joe.

Do you flavor your coffee?
We don’t offer flavored coffees, but our specialty-grade coffees naturally exhibit diverse flavors influenced by origin, variety, soil, climate, elevation, and processing. Like wine, each coffee’s unique notes—sweetness, acidity, and mouthfeel—are detailed on its tag. Brewing methods also affect flavor: cold brew enhances chocolate notes, while pour-over highlights floral and citrus tones. Experiment to find your favorite brew.
How much caffeine is in your coffee?
Caffeine content is reliant largely on bean variety, roast profile, and extraction method. The darker the roast, the less caffeine. The more water used per unit of coffee, the more caffeine is extracted. Roughly speaking, an 8-ounce cup of coffee will have somewhere between 85 and 105 mg of caffeine.
What is Cold Brew and Nitro Brew?
Cold brew is a method of brewing coffee using cold or room temperature water. You can use any bean to make cold brew.
“Nitro” cold brew is nitrogen-infused cold brewed coffee. We follow the same recipe as our traditional “still” cold brew, and then pressurize the keg with nitrogen to give the coffee a smooth effervescence that pours with a dense frothy head reminiscent of a Guinness draft beer. It is non-alcoholic and has about the same caffeine content as still cold brew.
