Factoid: This coffee is a blend of peaberries from smallholder farmers from various villages and washing stations in Tanzania's southern highlands. Most farmers in this region grow a few different cultivars, including N 39 and KP 423, two Tanzania-specific varieties. The way this lot was created was by sorting out the peaberries from 4-5 different washing stations to create a full lot of peaberries as opposed to the usual mixed lots. Farmers in this region typically harvest coffee in the morning and deliver their cherries in the afternoon, starting at around 3 pm. The depulpers get turned on soon after that, with lots being depulped and prepared for fermentation from 3:30 pm all the way to midnight. The coffees are graded after being depulped and are separated into different channels, where they will head to tanks to soak for 10-12 hours. They are washed clean of mucilage and then spread to dry for 9-14 days.

Do you flavor your coffee?
We don’t offer flavored coffees, but our specialty-grade coffees naturally exhibit diverse flavors influenced by origin, variety, soil, climate, elevation, and processing. Like wine, each coffee’s unique notes—sweetness, acidity, and mouthfeel—are detailed on its tag. Brewing methods also affect flavor: cold brew enhances chocolate notes, while pour-over highlights floral and citrus tones. Experiment to find your favorite brew.
How much caffeine is in your coffee?
Caffeine content is reliant largely on bean variety, roast profile, and extraction method. The darker the roast, the less caffeine. The more water used per unit of coffee, the more caffeine is extracted. Roughly speaking, an 8-ounce cup of coffee will have somewhere between 85 and 105 mg of caffeine.
What is Cold Brew and Nitro Brew?
Cold brew is a method of brewing coffee using cold or room temperature water. You can use any bean to make cold brew.
“Nitro” cold brew is nitrogen-infused cold brewed coffee. We follow the same recipe as our traditional “still” cold brew, and then pressurize the keg with nitrogen to give the coffee a smooth effervescence that pours with a dense frothy head reminiscent of a Guinness draft beer. It is non-alcoholic and has about the same caffeine content as still cold brew.
